As an amuse bouche, you could try Yasmin's Hot Cashews
Hot Cashews
250g raw cashews, peanuts or peeled whole almonds, or all mixed together
2 tbsp sunflower oil
½ tsp chilli powder
½ tsp salt
¼ tsp citric acid
Rub the oil into the nuts and roast in the oven (at medium temperature – 325 F, 170 C, gas mark 3) until light brown, so for eight to ten minutes. Remove and drain the oil on thick sheets of kitchen paper. While still hot, mix in the chilli and other flavourings. Cool and store in airtight containers.
